Duck Breast marinated in Shiokoji, dried four times and cooked pink, served with a beetroot flan and Piemonte hazelnuts, accompanied by a false chokeberry made from organic duck liver.Cavatelli, hand-rolled ricotta cavatelli, lightly smoked, with alliums in various textures and fresh, pickled chanterelles sauce.
Golden Trout from Oberwasser in Lower Austria, confited in butter, served with colourful Swiss chard, elderflower beurre blanc, yellow carrots and lemon balm cress.
