‘Ineo’ in Latin means ‘to initiate’, and Chef Heros de Agostinis immerses guests in a sensory journey of intriguing flavours, anchored by his Roman roots and inspired by his travels around the world, exotic perfumes and spices.

Heros De Agostinis “Autumn has always been my favorite. It is the time of the year that dishes taste with a natural undergrowth flavors…. is an explosion of “Gusto” as like nature was spared the Gran Final. I’m concentrate to mix my spices and give an extraordinary balance to our dishes”

As autumn arrives with its ripe flavours and rich colours, Chef Heros De Agostinis presents a new experience. INEO’S JOURNEY features dishes inspired by his travels, including “Roma” – traditional local handmade ravioli filled with braised oxtail inspired by his mother’s native Eritrea. INEO “GREEN” welcomes all diners with international vegetarian flavours, including a celeriac and saffron risotto and an autumn vegetable ceviche.
