Executive Pastry Chef
Soufiane Ait Boumallassa With more than 17 years of professional pastry-making experience, with a background in several notable patisseries in France and Germany, Soufiane has been our executive pastry chef for all three resorts in the lagoon since February 2018. Before relocating to the Maldives, Soufiane supervised operations across three Sri Lanka Minor resorts, inventing the dessert menus for all three of their five-starred restaurants - in addition to an impressive array of special event and banquet menus. He began his culinary career in leading hotel brands Kenzi Hotels & Sofitel Hotels and Resorts in his home country of Morocco, after receiving his diploma in professional culinary arts in France.
Director of Food & Beverage
Dinesh Jayasanka A well-established hotelier with over 20 years of food and beverage operation and team leadership experience, Dinesh oversees the operation of the three resorts’ diverse restaurants and bars, as well as its banqueting and catering services. Prior to joining our resort, he led the food and beverage teams of Anantara Kalutara Resort and Avani Kalutara Resort in Sri Lanka. Dinesh joined Anantara Hotels & Resorts in August 2012 as a restaurant manager in Qasr Al Sarab Desert Resort by Anantara, where he rose through the ranks to be in a position of leadership for teams in the Minor Hotels group both in the United Arab Emirates and Sri Lanka.
