Chef João Costa’s menu reflects the Mediterranean coast he grew up with: fresh fish, generous seafood and simple, confident flavours that do not overwhelm the ingredient. Highlights include Gambas al Ajillo, Phuket Lobster Ceviche, Seafood Rice, Oven-Baked Octopus “Lagareiro”, Grilled Phuket Lobster and Seafood Linguini - dishes shaped by olive oil, citrus, fire and the natural sweetness of the sea.

As the light softens, Sandal becomes one of the most inviting settings for happy hour in Koh Samui. Signature serves such as the Sandal G&T, Cha Cha & Chill and Lawana Sangria sit alongside Mediterranean classics including the Aperol Spritz, Limoncello Spritz, Negroni and Hugo, all designed for slow sunset moments by the shore.
