THE WHITE ROSE
Only two long-standing families in Hoi An create these treats in the truly traditional way. The original influence stems from the Chinese dim sum, which was adapted over the years and has evolved, Vietnamese-style, into the Hoi An White Rose.
The stones are heated to a temperature of 330°C and marinated seafood is firstly grilled in the oven and then cooked on the hot stones adding intense flavour to the whole taste.
FAIFO BEEF CURRY
Faifo was the original name for the city of Hoi An and, in this curry, the chef his own home-made curry paste and sauce inspired by generations of flavour sensations as a reflection of the origins of the city.
