At the helm of The White Room, Chef de Cuisine Tristan de Boer crafts creative dishes that express his love for Amsterdam, where he was born and raised. A vibrant nexus of cultures, the city inspires Chef Tristan’s eccentric culinary style as he respectfully blends aspects of Indonesian, Japanese, Thai and Surinamese cuisines with local culture and flavour.

His colourful career to date includes roles at the Librije’s Zusje**, Conservatorium Hotel, Ron Blaauw*, 101 Gowrie and Aan de Poel**, where classic, creative and fine-dining techniques broadened his repertoire and influence the memorable dining experiences he creates today.

At The White Room, Chef Tristan is guided by the desire to exceed guest expectations, and he does it with infusion, innovation and the inclusion of unusual ingredients, including geranium – a surprising staple of his kitchen.
