Co-founder and Managing Partner of Summer Experiment, along with other award-winning venues to his name, Jay Moir is a pioneering bartender helping to shape Vietnam's constantly-evolving cocktail scene.
Known for his "Alcohol Alchemist" style, Jay creates one-of-a-kind cocktails and high-quality mixology experiences that combine local ingredients, recycling methods and "garden craft" techniques.

Summer Moonlight Session
As the twilight skies fall over the stunning Bay of Quy Nhon, elegant moonlight sessions take over with crafted cocktails showcasing flavours from The Highlands to the coastal shores of Quy Nhon in Gia Lai Province.
The next moonlight experience embarks on a journey through Quy Nhon’s landscapes, from bamboo groves and rice fields to tropical shores. This month, we introduce Thu, more fondly known as Chicken, head bartender at the award-winning Summer Experiment cocktail bar in Ho Chi Minh City, most recently selected by Tatler Magazine as one of the best 20 bars in Vietnam.
She blends creativity, skill and a passion for mixology, producing imaginative cocktail concoctions and the featured cocktails include some out of the ordinary ingredients. Each of this evening’s four cocktails highlights an element of the coast with combinations including rum with Dijon mustard and gin with roasted rice foam.
Elevate the evening further with a curated Chef’s Table cocktail and dining experience where the blend of flavours is perfectly aligned, from delectable local cuisine to expertly harmonised cocktails, a combined sensory taste experience.
