Chef Éric Brujan

With over 34 years of culinary excellence, Éric Brujan takes the helm as Executive Chef at Anantara Plaza Nice. His career spans some of the most prestigious establishments in France, including Drouant, where he worked alongside Yannick Alléno, and at Hotel Nikko in Paris, where he supported Chef Jacques Sénéchal at three restaurants, including the Michelin-starred Les Celebrités.

After first taking on the role of Executive Chef at Stonehedge Inn and Spa in Boston, Chef Éric returned to Paris to join Myriam Kournaf at the five-star Montalembert Hotel. He later led the renowned restaurants at Le Méridien Etoile, managing L’Orenoc for five years, before overseeing the kitchen teams at Le Méridien in Nice.

Known for his leadership and creative approach to fine dining, Chef Éric is Master Chef of France and a proud member of the Disciples Escoffier, symbolised by the red scarf – a mark of distinction among the gastronomic elite.

With a career-long love for local products and suppliers, Chef Éric brings his passion for seasonal, high-quality ingredients to Anantara Plaza Nice, where his dishes feature the freshest catches of Alpes-Martimes fishermen and exquisite harvests from local farmers.
