Through what is called a “future-heritage” concept, chef Claudio Lanuto of Anantara has unveiled a new five-course tasting menu that features red prawns in Neapolitan pesto risotto and vegetarian eggplant with tomatoes and goat cheese tortellini. He also celebrates the 100 year anniversary of the cannelloni, the iconic cylinder-shaped pasta invented at this hotel, which can be ordered stuffed with either cod, potatoes, clams, and spirulina, or crunchy Grana Padano and basil pearls.
Continuing the theme, head barman Luigi Gallo has unveiled a botanical concept for the restaurant’s cocktails. Choose from the Amalfitano, a blend of bitters, Carpano Classico, Absinthe, and Gazzosa lemon, or the Amaro Dei Cappuccini, a distinctive amaro with soothing digestive properties inspired by the hotel’s own convent garden.
