Culinary Cultures

At Anantara, we love to celebrate the culinary traditions of our destinations. From our origin country Thailand to the shores of southern Portugal, we delve into local culinary traditions to unearth authentic flavours and share them with the world. Read on for just a few local dishes that we feel define the culture of their locale.

Thailand – Som Tam

This green pappaya salad encapsulates all that is wonderful about Thai cuisine. It is fresh, zingy and full of contrasting flavours – lime, chili, fish sauce, sugar cane paste, and more – and comes in a variety of forms, but always delivers a spicy punch. It is also packed with fresh and healthy ingredients such as tomato, Thai string beans and peanuts, so often ranks as a healthier option on any Thai menu.  

It’s difficult to wander far in Thailand without hearing the familiar ‘pok pok’ of Som Tam being prepared at a nearby restaurant or food stall. Portugal – Cataplana

Visitors to the Algarve in southern Portugal will want to try this hearty local stew at least once. The word cataplana refers to the dish itself and the vessel, traditionally made of copper, that it is cooked in. It is ideally made with fresh seafood slowly stewed with vegetables, spices and, sometimes, meat. The origins of the dish aren’t certain but many believe it is closely related to the tajine stews of northern Africa.

Cambodia – Fish Amok

This mild, creamy curry is a Cambodian staple. Melt-in-the-mouth fish is cooked with lemongrass, turmeric, kaffir lime leaves, chillies and coconut milk and served with rice. Fish amok is a safe introduction to Cambodian food, though most restaurants will be happy to up the spice levels if you ask.
