A source of inspiration for our pâtissier is Chef Antonio Bachour, one of the most prolific pastry chefs renowned for his interpretative skills and passionate imagination. Chef Niranjan’s own dessert creations are marked by interesting textures and thoughtful integration of sweet and sour with the use of fresh berries. Putting a modern twist to enticing classics like Poire Belle-Hélène, Tarte Tatin and Cherry Clafoutis are some of his favourite recipes.
Fascinated with innovation and technique, Sri Lankan-born Chef Niranjan’s culinary aspirations were instilled at a tender age. When he’s not designing sugary works of art, he loves spending family time with his baby girl who already has him wrapped around her sweet little finger.
